Mashed Potatoes

If the potatoes break up – they are overdone! But if the potatoes try to hold onto the fork, cook them a little longer. Drain the potatoes and return them to the pan. Put the pan back on a low heat for a very short while, just to dry them. Add a knob of butter, a little milk and salt and pepper and mash the potatoes up using a potato masher. Serve with your meal.
