Bob Evans Bean Soup Recipe
I was searching one day for Bob Evans bean soup recipe. I had heard that there are many restaurant copycat recipes to be found. I was able to find a recipe book that claims they give a step by step, exact ingredient, recipes of some of the top restaurants. But since I have not tried it yet, I felt it would not be fair to you telling I found the next best thing to sliced bread.
So, in the meantime, What could be better on a cold winter day than a good hot bowl of healthy but tasty soup? Personally, I love soup any time of the year, but I find it especially enjoyable in the wintertime. This recipe is great because it is quick, easy, tasty, healthy, and a perfect way to use up leftover turkey (or chicken). It is also easy to make by cooking a diced chicken breast or a couple of thighs if you don’t have leftover available. Even better, you can use the meat from a deli roasted chicken or could even cube up a hunk of deli meat. However you choose to make this soup it is still easy and quick. In today’s busy households, especially during this time of the year, that can be very important. So give this soup a try the next time you need a quick, easy meal.
TURKEY BEAN SOUP
1 tsp olive oil
1 small onion, chopped
1 tsp dried rosemary
1/2 tsp black pepper
1/2 lb cooked, cubed or shredded turkey (or chicken)
1 can (14-oz) fat-free reduced sodium chicken broth
1 can (14 to 15 oz) stewed tomatoes
1 can (15-oz) cannellini beans
Hot pepper sauce to taste
Heat the olive oil in a large saucepan. Add the onion and cook 4 to 5 minutes or until tender, stirring occasionally so it will not burn.
Sprinkle the rosemary and pepper over the turkey and add to the onion in the saucepan stirring to mix well. Add the broth and the tomatoes (do not drain); bring to a boil. Cover the pan, reduce heat to simmer and allow to simmer for about 10 minutes. Add the beans, stir to mix in, and cook another 10 to 15 minutes, uncovered, until the soup begins to thicken. Add hot pepper to suit your taste. Turn off heat and ladle the soup into serving bowls. Garnish with sprigs of fresh parsley, if desired.
NOTES: Leave out the hot sauce and allow each person to add it to their bowl, if desired.
This is a great way to use leftover turkey or chicken for a quick, easy, diabetic-friendly light meal.
I have now had a chance to taste Bob Evans bean soup recipe and I don’t want to delete the above recipe for the next person that may want to try it, but I did finally get a chance to do a full review of these copycat restaurant recipes. I thought this one would be perfect for the 4th. Its a light citrusy cheesecake…Ingredients for crust: Nonfat cooking spray, 1 cup graham cracker crumbs, 2 Tablespoons brown sugar, 2 Tablespoons butter or margarine, melted …Ingredients for filling: 2/3 cup sugar, 1/3 cup all-purpose flour, 1 teaspoon vanilla extract, 2 8-oz. packages nonfat cream cheese, 2 eggs, 1/2 cup 1% milk, 1/3 cup nonfat sour cream, 1 Tablespoon fresh lemon juice, 1 Tablespoon fresh lime juice, 1 Tablespoon fresh orange juice, 1 teaspoon lemon peel, grated 1 teaspoon lime peel grated, 1 teaspoon orange peel grated, 3 egg whites, 1/4 cup sugar. …How to make this recipe: Preheat oven to 300 degrees F., Prepare the crust: Coat a 9-inch springform pan with cooking spray. In a medium bowl, mix crumbs, brown sugar and butter then firmly press mixture into bottom and 2 inches up the sides of the pan. Prepare the filling: In a large sized mixing bowl, combine sugar and flour then add vanilla, cream cheese, and eggs. Beat until smooth. Add milk, sour cream, citrus juices and peels and beat until smooth. In a separate mixing bowl, using clean and dry beaters, beat egg whites at room temperature at high speed until soft peaks form. Gradually add 1/4 cup sugar, 1 tablespoon at a time and beat until stiff peaks form. Gently fold egg white mixture with cream cheese mixture. Pour into prepared crust and bake at 300 degrees F for 1 hour or until set. Remove from oven and let completely cool on a wire rack. Cover and chill for 4 hours or overnight. Sprinkle with grated lemon, lime and orange zest before serving (optional.) enjoy…..
